chatpate paranthe

Hello Friends
   After a long time period I m here again..
आज मैं आपके साथ अपनी फेवरेट रेसिपी शेयर करने जा रही हूँ !
कभी कभी हम रोज के खाने से बोर तो हो जाते है लेकिन कहना वही पड़ता है!सब्जियां तो बहुत तरह की बदल सकते है लेकिन रोटी में ज्यादा ऑप्शन नही मिलते !शायद मेरी ये रेसिपी आपको एक और ऑप्शन दे दे  , तो चलिए थोड़ा चेंज करते है अपना टेस्ट !



आवश्यक सामग्री (2 लोगो के लिए)
आटा    - 4 कप
तेल/घी - २ चम्मच (सरसो तेल हो तो ज्यादा अच्छा )
नमक   - १/4 चम्मच
हल्दी    - 1/4 चम्मच
आम का अचार - 1 /2  चम्मच
अजवाइन  - 1/4 चम्मच
कलौंजी  - 1/4 चम्मच
हींग     -      एक चुटकी
प्याज   -1 घिसा हुआ
हरा धनिया - कटा हुआ

 रेसिपी -विधि -

 -आटा ,तेल,नमक.अजवाइन , अचार, कलौंजी , हींग, प्याज, धनिया
 सभी सामग्रियों को मिलकर हाथ से रगड़ ले (दोनों हथेलियों से मलना ) !
-फिर गुनगुना (warm ) पानी से गूँथ ले! आटे को कुछ देर के लिए धक् के छोड़ दे जिससे आता और मुलायम हो जाये !
-फिर आते के पेड़े बना ले और पराठे के शेप में बेल ले (ट्रायंगल,स्क्वायर, या लच्छा आकार में ), फिर उसे तवे वेजिटेबल आयल से ब्राउन होने तक सेक ले और गरमागरम सब्जी, दही, या सॉस के साथ परोसें!

Vegetable Sandwich

A special and healthy recipe for every one who likes to taste something different...It is easy to make and tasty as well.. Have fun.
Serves- 4 person
Time- 20 minutes only.
Ingredient-
 
Chopped bread     -  8 pcs
Chopped capsicum-  1
Chopped onion     -  2
Chopped carrot     - 2
Chopped cabbage - 1/2
Beans  sticks        -7-8
Grated paneer    - 100 g
Cream                   - 4 tb spoon
Oil                        - 2 tb spoon
Butter-                  - 4 tb spoon
Tomato sauce       - 2 tb spoon
Chilly sauce         - 1tb spoon (as per taste)
Salt                       -as per requirement
 
Process-
-Take oil in a frying pan, heat, then add  onion, carrot and capsicum and fry for 2 minutes on high flame.
-Then add cabbage and beans, sault for 2 minutes, add tomato sauce and chilly sauce and mix well.
-Add salt and again mix well. Your mixture for stuffing is ready, keep it aside.
-Take 2 pieces of bread, spread cream on it with the help of spoon.
-Take some mixture, spread on it, and cover with creamy side of second piece of bread  to make a sandwich.
-Apply butter and roast (as per your preference) on tawa or you can use sandwich maker .
-Repeat for all pieces of bread , and serve hot.

Shahi Paneer

Category   - veg                
Serve-   4 person
Cooking time- 30 minutes
Preparation time-20 minutes

Ingredient-

Paneer (cottage cheese ) -500g
Tejpatta (bay leaf)          -  1-2 leaf
Cashew nut paste            -   2 full spoon
Saffron                            -   4-5 thread(a pinch)
Cloves                             -    2-3
Green chilli paste            - 1/2 small spoon
Crushed black pepper       - 2-4   
Cinnamon                        - 1peice
Garam masala                  -   1/2 spoon
Onion paste                      -   2 spoon
Ginger-Garlic paste          -  1 spoon
Cream                               -1/2 cup
Yogurt                               - 1/2 cup
Green cardamom powder  - 2cardamom
Salt                                    - According to taste
Cooking Oil                      - 2 large spoon 

Process-
 
-Cut the paneer in your desired shape(square or triangle)
-Make onion paste and keep aside.(or boiled onion paste, take less time to saute)
-Heat the oil in a pan or kadahi , add Tejpatta,cloves , cinnamon , black pepper, saute for 30 seconds.
-Add chilli and onion paste and after 5 minutes add ginger- garlic paste, garam masala and fry for 2-3 minutes.
-Add Cashew nut paste and after few minutes add yogurt and fry till water get absorbed then add cream, saffron and salt , stir.
-Finally add paneer and cook for 3-4 minutes.
-Garnish with green cardamom and serve .

Kadahi paneer..

Category-  veg
Serves    -  4 person
Cooking time  -  30 minutes
Preparation time  -  20 minutes

Ingredient-

Paneer (cottage chees) -500 g (cut in small pieces)
Capsicum                     - 2 small (cut in small pieces)
Tejpatta (bay leaf)       -  2-3 leaf
Crushed Coriander seed -2 spoon
Cloves                            -    2-3
Dried red chilli              -  2
Cinnamon                      -      2
Red chilli powder         -  1 tb spoon
Coriander powder        -  1 tb spoon
Onion (sliced)              -   1 large
Ginger-Garlic paste     -  2 spoon
Chopped Tomato        - 2-3 medium
Salt                              - According to taste
Cooking Oil                - 2 large spoon   

Process-

- Heat oil in a kadai or pan.
-Add bay leaves, cloves, cinnamon, red chillies, and crushed coriander seeds.
-After 1/2 a minute add onion and make it light brown, after few minutes add ginger- garlic paste and sauté for a while longer.
-Add coriander powder, red chilli powder and tomatoes.
-Cook over high heat till the oil separates.
-Add capsicum , after 1 minute add paneer and salt and half a cup of water and cover it with lid.
-Cook for 5 minutes, open and garnished with some crushed coriander seeds and green coriander leaves.
-Your Kadahi paneer is ready , Serve it hot with chapapatis.

VEGECENTRAL...Matar paneer

Welcome to my kitchen...Oh! sorry ...Welcome to your kitchen.
         Let me introduce myself.. I am Pratima  tiwari , a simple house wife having a loving husband and a cute beautiful daughter. This is my family , actually my introduction is incomplete without my family . My qualification is M.sc.(chemistry),  p.g.d.c.a. . , living in Gurgaon , India .
                    My subject was chemistry so I always heard that experiments are done in labs only but friends you know most of the time I realise that maximum numbers of experiment can be done in any kitchen only. No one can do beautiful, colorful, delicious experiment any where else as we can do in kitchen , and I always enjoy to do experiments with recipes  and  hope you will also enjoy it.
Then lets have fun with recipes... Starting with vegetables.

 Matar paneer-

Main course           -   veg
Preparation  time   - 20 minuts
Coocking time       -  30 minuts
Serves                    -  4 persons
 
INGRADIENTS--
 
Peas  (matar)           - 1/2 kg
Paneer                     - 300 g
Onion                     - 2 large (chopped )
Tomato                   - 1 large (puree)
Ginger                     - small piece
Turmeric powder     - 1/2 spoon (small)
Coriander powder    - 1  full spoon
Red chilli powder or green chilli paste - 1 spoon
 Garam masala          - 1/4 spoon
 Ghee or oil               - 250 ml
 Salt                           - According to taste
 
Process-
  • Cut the paneer into strips or cubes.
  • Heat sufficient ghee in a kadai and deep-fry till light brown.
  • Peel, wash and chop onions and ginger finely.
  • Heat two tablespoons ghee in a pan and add paste of onion and ginger.
  • Saute till lightly browned. Add turmeric powder, red chilli powder (or green chilli paste), coriander powder, salt and tomato puree then after a minut add  peas and cook for 5 minuts.
  • Add a little water, till the peas are tender and a little gravy remains. Add the fried paneer, garam masala powder and boil for five minutes.
  • Your delicious matar paneer is ready , Serve hot with chappatis or rice.
